  1. Banana Bread with a spin of Granola

Ingredients

  • 3 Granola Cups buy from Fit and Flex Granola

  • Three to four cup walnuts

  • Cup 1/2 pecans

  • 3 Tbsp raw sugars

  • 1/2 tsp marine salt

  • 1/2 Teaspoon of cinnamon

  • 1 Tbsp linseed

  • One-quarter cup of coconut oil

  • 1/3 Cup of maple syrup or agave (or honey unless vegan)

  • Extract 1 Tsp Vanilla

  • 1 Medium ripe banana (mashed / 1 ~1/2 cup of banana yield)


Instructions

Preheat the oven to 176 C (350 degrees F).

In a large bowl, combine the oats, cinnamon, sugar, salt, flaxseed, and nuts (see photo).

Heat the coconut oil, golden syrup (or agave or honey), and vanilla essence in a medium bowl over medium-low heat. Upon liquidation, detach from heat and whisk into banana puree until well mixed. Pour over the flour mixture, then combine well.

Put the mixture evenly on one or two baking sheets (make sure it doesn't get congested / use extra baking sheets as required, if the batch size increases) and bake for 23-28 mins or until golden brown. The coconut oil will help it crunchy but be able to monitor it carefully as it can get easily brown. 


Note:

When you don't toss the granola while cooking, it's going to get clumpy, which I love personally. But if you want crumblier granola, plop/stir a little to break up the tangles at halfway level.

Once the granola is noticeably browned, remove this from the oven and toss only a little to allow the air to circulate. Cool completely in a thermally-safe bowl or on a baking sheet. Place in an airtight container or jar.

Ingredients

  • Honey or agave with 1/2 cup, warmed

  • 2 Tablespoons of coconut oil, hot and melted

  • 1/2 cubicle vanilla extract

  • 1/2 cup of almond extract

  • Two cups (I used half almonds and half pecans)

  • 1 cup of shredded cocoa

  • Spicy chai mix (see below)


Chai Spice Mix Ingredients

  • 2 Teaspoons of cinnamon

  • 1 Teaspoon cardamom in the ground

  • 1 Teaspoon ginger

  • One-fourth teaspoon of allspice

  • 1/4 cubit black chilli pepper

  • 1/4 spoonful of ground cloves

  • 1/4 cup salt


Instructions

Preheat the oven to 300 ° C. Line a large baking tray with aluminium foil or parchment paper. (Or if your baking surface is not very large, I would suggest two smaller ones for the lining.)

Whisk the warmed honey, coconut oil, vanilla and almond extracts together into a small mixing bowl until combined. Deposit aside.

Toss oats, nuts, coconut and chai spice together in a large mixing bowl until evenly combined. Add the mixture of honey, then toss until the dry ingredients are nearly uniform. Spread the mixture into one even layer onto the lined baking sheet. Bake at halfway point for 20 minutes, removing the sheet from the oven to give the granola a quick stir enough to cook. Return the surface to the oven and bake for another 5-10 minutes, or until toasted with the nuts.

Remove the sheet from the oven and refrigerate on a wire rack. Store in a sealed container and hold until 3 weeks.

Ingredients

  • 1/2 cup of sliced almonds

  • 1/3 Cup Honey

  • One-quarter cup of coconut oil

  • 1/4 cup powdered cocoa

  • 1 Vanilla Teaspoon

  • 1/2 tablespoon of salt

  • 1/2 cup shredded coconut, unsweetened

  • 1/2 cup optional chocolate chips


Instructions

Preheat the oven to 275 degrees and baking pan lined with a silicone baking mat or spray with spray cooking.

Toss the oats together in a large bowl; set aside.

Heat the honey, coconut oil, cocoa powder, vanilla and salt over medium heat in a small saucepot. Continually whisk until the coconut oil melts and the mixture is smooth-around 2 minutes.

Remove chocolate from the stove, and spill over the mixture of granola. Whisk ingredients using a rubber spatula until it is completely covered with the chocolate mixture.

Spread granola evenly on a baking sheet and bake the mixture once halfway through the cooking time, stirring for 50 minutes.

Before mixing in the shredded coconut and chocolate chips, allow cooling fully.

  • 31⁄2 Granola Cups buy from Fit and Flex Granola

  • 1⁄2 cup (pumpkin seed) pepitas

  • 1⁄4 almonds

  • 2 Cinnamon Teaspoons

  • 1⁄2 cubit musk

  • 1⁄4 Ginger Teaspoon

  • 1⁄4 Cloves in the Teaspoon

  • 3⁄4 cup applesauce, without sweetening

  • 1/2 cup of maple syrup

  • 1 Vanilla Tablespoon Extract

  • 1⁄2 cup apples which are dried


Instructions

Preheat the oven to 350 degrees F. Whisk together all the oats, pepitas, almonds, and spices in a separate bowl. Warm up the applesauce, maple syrup and vanilla extract in a saucepan over medium heat.

Pour the cooking liquid into the dry and mix well. Spread the granola uniformly onto a prepared baking sheet and bake until lightly browned for 20-25 minutes or. You can also store this in an airtight container

  • 1/4 cup pure maple syrup (80 grams)

  • 1/4 cup (55 grams) of coconut oil, liquid condition

  • 2 Large White Eggs, optional *

Stir in the flakes of oats, almonds, and coconut until the mixture is uniformly coated. Spread evenly on a covered baking sheet and bake for 15-20 minutes or until mildly fragrant. Remue raisins. Cool before storing to ambient temperature in an airtight bag.

Serve with milk or yoghurt
